Bellini Foam

Serve Up Elegance with this Peach Bellini Cocktail

Put a smile on someone’s face when you hand them a flute of sparkling bubbly topped with pretty peach foam. A perfect signature drink for a bridal shower, Mother’s Day brunch, or any other special occasion.

Ingredients for 1 pint iSi Creative Whip:
10 ounces peach purée
2 ounces simple syrup*
2 ounces grenadine syrup
2 ounces peach liquer
3 ounces Processo
3 gelatin sheets, softened in ice water

Preparation:
Heat half the apricto purée and add the strained gelatin. Add the rest of the ingredients and stir well. Strain the mixture through a fine mesh strainer and pour into a 1 pint iSi Creative Whp. Screw on one iSi cream charger and shake vigorously. Chill for at least 3 hours. Serve as a topping on Prosecco or sparkling rosé.

Note:
To make simple syrup, combine equal parts sugar and water and bring to a boil. Cool and reserve as needed.
