Mango-Coconut Mousse

Coconut Mango Mousse

A Mango Coconut Mousse for a Dessert that’s Tasty & Tropical

Enjoy a taste of the tropics with this sunny mango-coconut mousse. Garnish with fresh mango slices or flaked coconut for a nice contrast of textures.

Ingredients for 1 pint iSi Creative Whip:
6 ounces mango puree
2 ounces coconut milk
2 tablespoons sugar
1 cup chilled heavy cream

Preparation:
In a blender, combine mango puree, coconut milk, and sugar and blend until smooth. Stir in the cream. Strain mixture through a fine mesh sieve and pour into a 1 pint iSi Creative Whip. Screw on one iSi cream charger and shake vigorously. Chill for at least 30 minutes before serving.

 

Tiramisu

An Italian classic for a reason. This pretty, layered dessert looks even more special when you make them in individual portions but it’s just as good when made in a large dish for your next office party.

Italian Style Tiramisu Recipe

Marscarpone Filling for 1 pint iSi Creative Whip:
4 large egg yolks*
1 1/4 cups chilled heavy cream
4 tablespoons mascarpone
6 tablespoons powdered sugar
2 teaspoons Amaretto liqueur (optional)

Preparation:
Combine all ingredients and mix until smooth. Pour into a 1 pint iSi Creative Whip. Screw on one iSi cream charger and shake vigorously. Chill for at least one hour before assembling dessert.

For Assembly:
Ladyfinger cookies
Strongly brewed coffee, chilled
Cocoa powder for dusting

Assembly:
In a glass container or individual serving cups, layer dessert beginning and ending with mascarpone filling between ladyfingers soaked in coffee. Top with more mascarpone filling and dust with cocoa powder. Chill for at least an hour before serving.

* Note: This recipe contains uncooked egg yolks.

 

Chocolate Mousse

Chocolate Mousse Recipe

Ingredients for a 1 pint Creative Whip:
1 3/4 cups chilled heavy cream
8 tablespoons instant hot chocolate powder
1 to 2 tablespoons instant coffee or espresso powder
1 tablespoon dark rum (optional)

Preparation:
Combine all ingredients and stir together until powders are completely dissolved. Strain mixture through a fine mesh sieve and pour into a 1 pint iSi Creative Whip. Screw on one iSi cream charger and shake vigorously. Serve immediately or refrigerate until needed.

 

Peanut-Chili Dip

Peanuts get a kick of cayenne in this creamy dip. Serve with grilled meats and al dente vegetables. Garnished with crushed peanuts and fresh herbs like cilantro and mint, familiar flavors meet the exotic.

Use peanuts that are out of the shell, roasted, and salted.

Make your own beef stock whenever possible and keep it in your freezer until you need it. If necessary you can buy the good quality beef demi-glace from Williams-Sonoma. Because demi-glace is richer than stock, dilute in half with water. You can also substitute the stock completely with coconut milk for a vegetarian variation.

Peanut Chili Dip Recipe

Ingredients for a 1 pint Creative Whip:
1/2 cup shelled peanuts
1 cup beef stock or coconut milk
4 ounces cream cheese, room temperature
salt and cayenne pepper to taste

Preparation:
In a blender or food processor puree the peanuts, stock, and cream cheese smooth. Set a fine mesh sieve over a bowl. Strain the mixture with the help of a spatula. It will be thick. Season with salt and cayenne pepper to taste. Pour into your Creative Whip bottle. Screw on one iSi cream charger. Shake vigorously. Chill in your refrigerator at least 30 minutes then serve.

 

Creamy Curry Dip

A tasty dip for chicken or pork skewers. Also great as a vegetable dip, sandwich topping, or mixed into some shredded chicken for an easy curried salad.

9 ounces cream cheese, room temperature
5 ounces coconut milk
2 ounces vegetable stock
1 tablespoons curry powder
1 tablespoon pineapple juice
2 tablespoons heavy cream
Salt and black pepper to taste

Preparation:
In a food processor or blender, combine all ingredients except the cream. Blend until smooth and stir in heavy cream. Season to taste with salt and black pepper. Strain through a fine mesh stainer and pour into a 1 pint iSi Creative Whip. Screw on one cream charger and shake vigorously. Chill for at least one hour before serving.

Ingredients for 1 pint iSi Creative Whip:
10 ounces peach purée
2 ounces simple syrup*
2 ounces grenadine syrup
2 ounces peach liquer
3 ounces Processo
3 gelatin sheets, softened in ice water

Preparation:
Heat half the apricto purée and add the strained gelatin. Add the rest of the ingredients and stir well. Strain the mixture through a fine mesh strainer and pour into a 1 pint iSi Creative Whp. Screw on one iSi cream charger and shake vigorously. Chill for at least 3 hours. Serve as a topping on Prosecco or sparkling rosé.

Note:
To make simple syrup, combine equal parts sugar and water and bring to a boil. Cool and reserve as needed.

Ingredients for a 1 pint iSi Creative Whip:
1 red bell pepper, seeded and diced
1 cup (8 ounces) cream cheese, room temperature
1/4 cup mascarpone
1 tablespoon olive oil
lemon juice to taste
garlic powder to taste
salt and black pepper to taste

Preparation:
Sautée bell peppers in olive oil until softened. Transfer peppers to a food processor or blender. Add cream cheese and mascarpone and purée until smooth. Season to taste with lemon juice, garlic powder, salt, and black pepper. Strain mixture through a fine mesh sieve and pour into a 1 pint iSi Creative Whip. Screw on one iSi cream charger and shake vigorously. Chill for at least 2 hours before serving.

How to Make Whipped Cream with a Cream Whipper

Welcome to Whipped Cream 101 where you’ll learn the simple steps to make whipped cream in seconds.

Why use a cream whipper? Well, does this sound familiar to you? You’ve got a few friends over for dinner. Ready for dessert, you excuse yourself from the table and head into the kitchen, a helpful friend in tow. You take the bowl, whisk, and cream out of the fridge, where you had to make room so they could chill. While your friend helps tidy, you start whipping. All conversation stops because of the loud, ear-ringing clatter of whisk against bowl. Bits of cream splatter on to your “Dry Clean Only” sweater. Your whisking arm sorely reminds you to get to the gym more often.

With a cream whipper, you made your whipped cream before dinner – maybe even the day before. You and your friend grab dessert, coffee, and whipped cream then re-join the party. Plus, with a cream whipper you make five times more whipped cream than you can by hand! And it’s fun – really fun.

Let’s get started. First the cream. You can use any kind of heavy whipping cream (38% butterfat). I like the heavy whipping cream from Country Dairy at my Whole Foods Market because of its lovely taste and texture. Plus it’s nothing but cream – no thickeners – and from a relatively local family farm in Michigan.

Then add any sweeteners and flavorings. Again, use whatever you want: powdered sugar, Splenda, stevia, honey, agave, maple syrup, or flavored syrups. Just make sure any sweetener is completely dissolved. I usually don’t add any sweetener because I find the taste of cream sweet enough, especially when topping a rich drink or dessert.

Pour heavy cream into bottle, filling only up to the max fill line etched on the outside of the bottle.


Screw one iSi cream charger.


Shake vigorously 3 to 5 times.


Test the consistency. Hold the bottle with the tip pointed straight down and press the lever to dispense.


Whipped cream!

Store the rest of your whipped cream in the refrigerator with the bottle upright or on its side. Remove the decorative tip and wash it by hand, using the little cleaning brush included. Remember to recycle your charger and cream container. Your whipped cream will keep fresh and fluffy up to 10 days in the bottle!
